GFGL RECIPE BLOG: Bang Bang Banana Bread

One of my weaknesses in life is bananas- banana whips, banana sandwiches, banana cream pie-and the bread is no exception. It’s one of those foods that can be a breakfast, snack, or dessert and with this recipe, a pre-workout snack! It’s the black t-shirt of the kitchen-it can be dressed up or down based on the occasion. It’s also one of those feel-good foods that can be easily replicated since there are so many renditions of it.

This recipe is different from grandma’s traditional muffins because there is a decent amount of protein from the yogurt, fiber from the oats, and tons of potassium from the bananas. What more could you ask for in a little muffin? Well I guess you could ask it to be figure friendly, because this one is low-calorie (but you wouldn’t believe it by the taste). I of course had to experiment with them-so I put a mixture of walnuts, chocolate chips, and if you could tell by my signature-Nutella in a few of them!

Ingredients:

*2 1/2 C oats (old fashioned kind, not quick cooking)
*3/4 C of plain low fat greek yogurt (6 oz container)
*2 eggs
*2/3 C sweetener of choice or 2 T stevia sweetener
*1 1/2 tsp baking powder
*1/2 tsp baking soda
*2 bananas

Important: Spray muffin tins with non-stick cooking spray, or use a foil liner/silicone pan to bake because of the non-flour base.

Directions:
1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners, (or just use a silicone muffin pan).
2. Blend oats until they form a flour consistency, then add the remaining ingredients and blend until all is smooth.
3. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.

Without any added goodies, these come out to about 150 calories a muffin-can’t get much better than that. You could also add protein powder to the mix if that interests you for a little more “BAM” in your bread!

This recipe has become my new favorite. Let me tell you that I have some commitment issues when it comes to recipes-I don’t like to be held down to just one! But this muffin recipe has made me change my ways. I am now in a relationship with this recipe. I am very close to making it Facebook official. So for all you other single ladies go try this recipe and then I am almost positive you will be creating a wedding board on Pinterest, because I can assure that you will fall head over heels like I have.
